The lampascioni are put to “cure” in the red soils of our Murgia in order to sweeten the characteristic bitter taste of the lampascione. Rich in mineral salts and proteins, they are collected and peeled by hand in order to obtain the heart. They are a typical Apulian product with a strong and bitter taste, the harvest takes place between January and February
